I am Shilah Ferr, author of April’s Heart. Some readers have told me how they’ve enjoyed the “Down the Shore” beach scenes from the Jersey shore. I totally love those parts too! It really brings back those memories from our childhood vacations there.
In the story there are several family dinners that take place there. I would venture to bet that this salad would have been present at any one of those meals!
Here in coastal Virginia, as well as many places up and down the east coast, we like to pick blue crabs in the summer. My birthday is in the summer, I can’t tell you how many times I’ve chosen to get a half bushel of jumbos for my family and friends to celebrate, as well as when my dad comes to visit from Arizona every summer (except for this one, sadly). He always wants that on our list of activities!
And what an “activity” it is! Lasting several hours, with lots of lemon, butter and many drinks. However, side dishes are definitely needed as picking crabs is a long, tedious process that may not even fill you up! So along side corn on the cob, potato salad or macaroni salad, I always serve this tomato salad. It is somewhat similar to a Caprese salad, but I definitely do not call it that, as it is not. My family loves it, and I hope you do too!
several beefsteak tomatoes
1 red onion
1 lb mozzarella cheese
1 bunch basil
standard vinaigrette- mine is olive oil, red wine vinegar, garlic powder, oregano, salt and pepper
First, do all the necessary slicing. Thinly slice the red onion, the cheese and the tomatoes. On a plate or platter arrange all the slices, tomato, onion and cheese fan-style around the outside of the plate, then fill in the middle. Make it pretty.
Chiffonade the basil into pretty strips, or tear it into pieces. Pour the vinaigrette over top the salad, then sprinkle with basil! Beautiful!
