In 2011, I started writing a cookbook as a companion to my Tizzy/Ridge Trilogy. In those books, I cast my sister and myself as two of the characters. Since we both love to cook and bake, having us own Sweet Thangs Bakery was perfect.
However, I took some liberties and made us younger with bigger boobs! That’s the beauty of fiction.
Today, I share a recipe from the bakery. There is nothing more refreshing on a hot day than a cool salad. This one is super easy and quick, and oh, so good! I hope you’ll try it.
Saucy Fruit Salad
1--20 ounce can of pineapple tidbits, drained
1--11 ounce can of mandarin oranges, drained
1--10 ounce package frozen sliced strawberries-almost thawed
2- firm bananas, sliced
1-21 ounce can peach pie filling
Slice and soak the bananas in the pineapple juice to prevent browning…or you can just add them right before serving without soaking.
Mix all the ingredients together.
Another variation of this is to use maraschino cherries in place of strawberries. If you do, drain the cherries before you add them. And if you really want to go wild, experiment with other flavors of pie filling. We prefer peach because we’re southern girls, and we do love our peaches!
