In my latest release, The Roommate Problem, the hero, August, is a bit of a health nut unlike his new roomie, Mo, who hasn’t met a deep-fried cheese covered item of food she doesn’t like! She doesn’t understand why anyone would buy four zucchinis at once, but August knows the zucchini is a versatile veggie with endless possibilities.
Now, when I was a kid nothing made me run faster than my mother telling me we were having zucchini for dinner, yuck! Through the year, and thanks to my fabulous mother-in-law who is an amazing cook, I’ve come to see the potential for zucchini in my life. We even planted some in our garden this year. I don’t know if you know this, but zucchini plants produce a lot…like seriously, A LOT! We are up to our ears with zucchini.
Lucky for us we have a bunch of delicious zucchini recipes we’ve gathered over the years including the one I’m going to share with you today. It comes from my fabulous mother-in-law and it’s a hit with adults and the kiddos.
2 cups sugar
3 tsp. vanilla
1 cup oil
2 cups unpeeled shredded zucchini
3 cups flour
½ tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
½ chopped nuts or chocolate chips (optional)
Beat the eggs until light and fluffy then add the sugar, vanilla, and oil. Blend well. Next stir in the zucchini. Sift the flour, baking powder, salt, baking soda and cinnamon together. Add in the egg mixture. If you want to add nuts or chocolate chips fold them in now. Pour into muffin tin (I use cupcake liners, so the muffins pop out easier) and bake at 350 degrees for 10-15 minutes.
These muffins are so delicious as they are or with a bit of butter or even cream cheese on top and since they have zucchini in them, you’re technically eating your veggies too!
