My cat café series features a bakery and two fantastic bakers. This recipe is one of my favorites! The cookies are flavorful and delicate. You can use a decorative shortbread pan if you want to be fancy, or small cookie cutters, or simply make balls and flatten them a little.

Chai Tea Shortbread Cookies
If using loose-leaf tea, grind the tea into a rough powder first. If using teabags, cut open the tea bags and measure. You’ll need 4-6 teabags.
Note that you can also press the dough into a shortbread pan and bake for about 30 minutes
2 cups all-purpose flour
2/3 cup sugar
2 tablespoons chai tea
1/2 teaspoon salt
1 cup (2 sticks) butter, room temperature
2 teaspoons vanilla extract
